Shiitake Mushroom Cream Soup (SO GOOD!)
This shiitake soup is amazing! But be warned, if your friends or family taste this soup you will be coerced into sharing it with them. The soup cannot be resisted.
LET’S MAKE SOUP!
Serves 4
Ingredients:
3 cups fresh shiitake mushrooms chopped
1/3 cup chopped onion
1/2 clove garlic minced
4 Tbsp. butter
4 Tbsp. flour
2 and 1/2 cups light cream or milk
2 and 1/2 cups of water
Recommended seasonings to taste:
Salt
Pepper
Thyme
Red pepper flakes
Directions:
In a large saucepan that can hold all the ingredients listed above, sauté the mushrooms, onion, and garlic in the butter for approximately 10 minutes until the mushrooms become soft. Split the mushroom mixture into two groups. 1/4 the mixture stays in the saucepan and is mixed with the water. Simmer this 1/4 and we’ll get back to it.
The other 3/4 gets placed into a fry pan. Slowly mix in the flour and mix thoroughly to coat the mushrooms. Sauté the flour mushroom mixture for 2 minutes. Next, add the cream or milk slowly over several minutes while stirring, to create a thick mixture by cooking off the water. Once the mixture is thick, add it to the other mixture in the saucepan. Simmer everything for 10 more minutes and be prepared to serve 4 of the happiest people ever; after they taste the soup of course! Season with salt, pepper, thyme, and red pepper flakes (optional) to taste.
