Lion's Mane "Crab Cakes" (try it as a sandwich)
Lion's Mane Crab Cakes look like a burger and are fantastically yummy! This recipe is easy to make and is a great alternative to meat, being full of protein and nutrients.
Serves 4
Ingredients:
1 lb Lion's Mane, diced or shredded
1 cup Panko bread crumbs
1/3 cup mayo
1 tbsp Dijon mustard
1 tsp Worcestershire sauce
2 tsp Old Bay seasoning
2 tbsp fresh parsley
1 egg
Olive oil or ghee
Butter
Directions:
Chop the lion's mane mushroom into pretty small pieces (a food processor works well) and roast them on a cookie sheet covered in tinfoil. Set your oven to 250° F and roast for approximately 10-15 minutes. It should look similar to browned ground beef when it's ready.
Mix the remaining ingredients together in a bowl with the lion's mane to create a mixture that sticks together well. The bread crumbs and egg portions are rough estimates based on how wet the mixture is and whether or not it holds together. If it's too wet, add some more bread crumbs or a little bit more egg.
Use a cast iron or non-stick fry pan on medium-high heat. Create patties to the desired size and pan fry them in olive oil or ghee until golden brown. Add a little butter in the last 2 minutes of pan frying to give your crab cakes a big flavor boost! You are going to love these crab cakes!
